Guests notice what your team stopped seeing.

Most restaurant owners know whether their food is good. What's harder to see from inside the building is how long a guest stands at the door, whether the server can explain the menu, and what happens when something goes wrong. Those moments show up later in reviews and in whether people come back.

  • The front door feels unmanaged. No greeting, wait times that don't hold, confused seating.
  • The pace is uneven. Long gaps between seating, drinks, food, check-backs, and the check.
  • Staff know the tasks but not the standard. The work gets done, but the experience changes from shift to shift.
  • Managers hear about problems from reviews. Leadership reacts after the fact instead of catching it on the floor.

The audit is the usual starting point. The other two build on it or stand on their own, depending on where you are.

What we don't do: menu costing, kitchen design, or financial turnarounds. If that's what you need, we'll tell you so in the first conversation.

Six areas, 100 points. Every item is scored 1 to 5 on what we can actually observe during the visit, so a second visit can be compared fairly with the first.

How an engagement works

  1. Baseline

    Before we visit, we record something you can measure, like your review rating, average check, or ticket times.

  2. Audit

    We visit as regular guests and log what supports or weakens the experience, with times attached.

  3. Fix

    Management gets a debrief ranked by impact. If training is part of the engagement, your team practices the specific behaviors that need to change.

  4. Re-score

    We come back after the changes, score the visit again, and show you what improved, what didn't, and what still needs work.

Who does the work

Last Notch was founded by Chris Davis. Chris has worked as part of restaurant opening teams across fine dining, Italian, Mexican, and casual concepts, and has spent more than ten years training and coaching teams as a professional facilitator and speaker.

Last Notch combines those two kinds of work: reading the floor from the guest's point of view, then turning what was observed into clear standards managers can coach and teams can repeat.

Restaurant names and specific opening roles are intentionally not listed until permission to use them publicly is confirmed.
